Chef Jody Adams is one of those people who believes that if something is
worth doing, it should be done right. She believes that food preparation
is an art and that recipes should be prepared from scratch with only the finest ingredients.
Adams doesn't believe in taking shortcuts when it comes to cooking, and her
mission is to convince readers that by doing things her way, they will
want to take the extra time required. She does give a nod to the time
pressures of today's home cooks by providing do-ahead tips whenever
possible. This makes these restaurant-quality recipes feasible for even
